These cold winter mornings call for a warm and hearty breakfast.  I find myself waking with sweet dreams of  oatmeal, bananas and chocolate chips….. But for those busy mornings I don’t always have time to sit down and enjoy a sweet bowl of warmth! For this reason I came up with a portable option that perfectly combines my dreamy Oats, Bananas, and Chocolate Chips…….  I made MUFFINS!  To make the idea of these even sweeter, all you need to do is measure the ingredients and toss them in a blender….. its that simple!

When making these sweet treats for the family you can be confident that all the ingredients are wholesome and healthy. The Oatmeal base allowed for a  Gluten-Free option, with some beneficial added fiber.  The muffins have no added cane sugar, I made them with a Coconut Nectar. This alternative sweetener has a low Glycemic Index, which minimally effects blood sugar spikes. I also opted to use Lily’s Stevia Chocolate Chips.  I rather sweeten my baked items with a natural sweetener whenever possible. These muffins have no added oils, the Whole Eggs provide some healthy fats and protein. I kept the muffins moist with the Bananas and Greek Yogurt (which added some more healthy protein). These little pillows of perfection are great for breakfast, snacks or dessert.  The husband/wife and  kiddos are bound to love them……  after all, mine devoured 4 within a 10min period.

 

Ingredients

Servings 12 muffins       Macros Per muffin P 5.3/C23.9/F4

  1. 2 cups Rolled Oatmeal
  2. 2 Ripe Bananas
  3. 1 cup 0% Fage Greek Yogurt
  4. 2 Whole Eggs
  5. 1 TBS Coconut Nectar
  6. 1/2 Cup Lilys Chocolate chips (Sugar-free)
  7. 1TSP Vanilla
  8. 1TSP Baking Powder
  9. 3 Packets Truvia or sweetener of choice

Instructions

Pre Heat oven to 350 Degrees

Spray Muffin pan with Pam

Place all ingredients in blender until smooth (exception of chocolate chips)

Pour mixture into a medium bowl and fold in chocolate chips

Using a half-cup measure pour mixture into Muffin pan. Fill each cup 3/4 way full. May be a little less than half cup

Bake for 15 mins or until center is firm. Insert a tooth pick into center of muffin and when it comes out clean the muffins are done.

Remove from oven and allow to cool for 5 mins- then enjoy the goodness of the  warm chocolate chips.

Store in refrigerator after the muffins have cooled
