Calling all moms, dads, and busy adults!

Life gets crazy and we don’t always have time for breakfast let alone a nutritious one. We have all heard the saying “breakfast is the most important meal of the day.” But it is so true. Eating the right breakfast can start your day out right by giving your brain and body the nutrients it needs after a night of fasting. In addition to increased energy, eating breakfast has lots of useful health benefits like mental sharpness, better weight control, and fueling your muscles with power for those awesome feel-good work outs.

Breakfast also happens to be one of my favorite meals. I absolutely love waking up with a nice cup of coffee and sitting down to a good leisurely breakfast. But unfortunately I can’t do this every morning as I usually have a full day of treating patients ahead of me during the week. Therefore in order to feel my best I need a healthy, wholesome grab-and-go option to enjoy while I drive into work.

Luckily, this recipe is a keeper and will definitely help you start your mornings off right. I have decided to mix it up a little and make some healthy breakfast bars!!! They are super easy and tasty. Made with no added sugar, you can add in dried fruits, swap out the nuts, or customize however you want. Try making them ahead of time, portion them out in daily servings, and pair with a green shake as you head out the door. Breakfast perfection.

Kids will love them because they can easily eat them with their fingers or graze on them throughout the day. Also what child would not love to see some gooey chocolate chips on their plate after you pull these out of the oven?!

 

Ingredients:

  • 1 cup apple sauce
  • 1/4 cup pumpkin
  • 2 whole eggs
  • 1/2 cup Truvia (natural sweetener)
  • 1 cup protein pancakes mix
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 3 cups Old Fashioned oats
  • 1/2 cup Lilys chocolate chips (sweetened with Stevia)
  • 1/4 cup pecans on top

 

Instructions:

  • Preheat oven to 350
  • Spray PAM on a 13×9 glass dish
  • Mix all ingredients together and place in baking dish.
  • Bake for 15-20 mins or until golden brown and cooked through the middle.
  • Enjoy warm or cold!!
