Happy Halloween

Looking for a delish Sweet Treat for your little Gremblins today? What better way to celebrate Halloween, than making SUGAR-FREE Cupcakes?

You already know your children are going to be on a SUGAR high from all that Trick or Treating… So why not TRICK them with a Chocolaty TREAT you know is actually good for them.  I have put together a simple Cupcake Recipe that is QUICK and EASY for all you busy Parents. The entire process takes 20 mins- this includes baking time…. Who doesn’t have 20mins to make a delish dessert you and the kids can enjoy.

For this recipe I used a Sugar-Free Box mix, subbed out the oil for pumpkin and pudding mix, used 2 eggs , sugar-free chocolate chips and water.  I love making recipes from scratch, but sometimes the box mixes are an easy go-to and add simplicity in your life.  The Sugar-free mixes are actually tasty and make for a great guilt-free treat.

The pumpkin and pudding mix kept the cupcakes moist without the added calories from oil/butter.  I am also a huge fan of the Lily’s Stevia Chocolate Chips. They had such a great flavor and sweetness to any recipe.  These little cupcakes are great to eat as “muffins” without the frosting or as cupcakes with the frosting.

(After all a cupcake isn’t a cupcake without frosting….. thats why they are called muffins 😉 )

So, I bet you are all thinking this is too good to be true… there must be sugar in the frosting?  But you are wrong.  I used the Greek Yogurt Cream Cheese with Almond extract and Stevia…. Whipped it all together and frosted these little monster.  Barely added any extra macros except for protein.

The box mix makes 12 full sized cupcakes- but for this recipe I made 30 MINI cupcakes which cut back on the macros and made them simple  bite-sized snacks.

Like I said- this recipe is super easy and actually Macro Friendly…. Now Gather all your Goblins and create your Spooky Cupcakes!

 

Macros per Cupcake with Frosting

Ingredients:

  • 1 Box Sugar-Free Devils Food Mix
  • 1 Box Sugar Free Chocolate Pudding
  • ¼ cup Pumpkin Puree
  • 2 Whole Eggs
  • ¼ Cup Stevia Chocolate Chips
    • Add water per Box Directions

Frosting:

  • 1 Package Greek Yogurt Cream Cheese
  • 4TSP Almond or Vanilla Extract
  • 2 TSP Stevia or Sweetener

 

Instructions:

 

  1. Pre Heat oven to 350. Spray MINI cupcake pan with Pam
  2. Mix together dry and wet ingredient’s until texture is smooth
  3. Use a round Tablespoon and pour into cupcake pan
  4. Place in oven and let bake for 10-12 mins. Check center with a toothpick- when the toothpick comes out clean the cucpakes are done
  5. Let cupcakes cool and then frost.

 

WHILE CUPAKES BAKE

Whip together frosting ingredients and add food coloring if you would like.  Spread or pipe the frosting on the cooled cupcakes and decorate with fun goodies.

Use a TBS to pour them in a pan

Mix the frosting while the cupcakes cool

Frost the little monsters when cool
