If you haven’t been able to tell already, but Peanut Butter is my LOVE!  I have talked about it in the past, but this is definitely one of my trigger foods…. I avoid eating it straight from the jar!  Instead I will bake with this beloved ingredient to help control my cravings! These cookies were one of my first macro recipes years ago and I have continued to make them!  I love baking and experimenting in the kitchen… Not to mention how much my Hubby loves it!  (He is my personal taste tester)

 

These cookies have a great crisp bite on the outside and a cakey texture on the inside.  There is a subtle sweetness with a delish Peanut Butter flavor!  These cookies are great little treats for afternoon snacks or a bedtime dessert!  Hope you enjoy!

 

Ingredients:

  •  2 Egg whites
  •  2 scoops Vanilla, chocolate or peanut butter protein (Evogen Isoject)
  •  ½ cup Almond meal
  •  ½ cup Stevia in The Raw
  •  1tsp Baking soda
  •  1 cup Natural Peanut Butter or Almond Butter
  •  ½ tsp Vanilla extract

Instructions

  1. Preheat oven to 350. Spray cookie sheet with PAM
  2. Beat egg whites lightly and add in the rest of the ingredients. Mix together
  3. Form bite size balls with hands and place on cookie sheet. Slightly flatten with palm of hand.
  4. Bake for 10-12 mins or until golden brown and let cool before transferring to plate

 

Great Bite size treats that are low CARB and low SUGAR! Gives you the right amount of healthy fats!

** You can also add in chocolate chips…. Makes them an extra yummy treat!
