I love filling the kitchen with  the smell of pumpkin and cinnamon. After all, it’s the Holidays and a time for baking.

These simple Muffins are sure to be a hit without sacrificing time. We all get busy during the holidays, but still want time to bake for our family. Not to mention finding healthy recipes to prevent the typical holiday weight gain. These little bite sized treats are low in sugar and full of flavor.  Trust me, you have to try them!  I found them perfect for breakfast, a snack or dessert!

These muffins are light and fluffy with a heart warming flavor. Enjoy them warm or cold. With milk or coffee! These are one of my favorite holiday recipes.

 

Macros per muffin

Ingredients:

  • 1 Box Sugar-Free Yellow Cake Mix
  • 1 Box Sugar Free Vanilla Pudding
  • ¼ cup Pumpkin Puree
  • 2 Whole Eggs
  • ¼ Cup Stevia Chocolate Chips
  • 1TBS Cinnamon
  • 2TSP Maple Extract

 

 

Instructions:

  1. Pre Heat oven to 350. Spray MINI cupcake pan with Pam
  2. Mix together dry and wet ingredient’s until texture is smooth
  3. Use a round Tablespoon and pour into cupcake pan
  4. Place in oven and let bake for 10-12 mins. Check center with a toothpick- when the toothpick comes out clean the cucpakes are done
  5. Remove and let cool. Either store in air tight container at room temperature or place in fridge
